Whole Wheat Banana Bread

Whole Wheat Banana Bread

Ingredients
1/2 C. (115g) butter
1 C. sugar
2 eggs
1 C. mashed ripe banana (3 bananas)
1 tsp. vanilla
2 C. Whole Wheat Flour
1 tsp. baking soda/2 tsp baking powder
1/2 tsp. salt
1/2 C chopped walnuts (optional, any nuts will also do)

Method
1. Preheat oven to 350 degrees
2. In a large bowl, cream butter and sugar.
3. Add eggs, bananas and vanilla and beat well.
4. In a separate bowl, mix together the flour, baking soda/powder and salt
5. Stir the liquid ingredients into the dry ingredients.
6. Add the chopped nuts if using.
7. Pour mixture into a greased, 9×5-inch loaf pan and bake for 60 minutes.
8. Let cool in pan for 10 minutes before taking it out and let cool on wire rack

**Mash bananas well with a fork so they retain a texture and some chunks
**Don't blend them smooth in a blender because when used in a recipe, your baked good will become too dense and rubbery
**Speed-ripen bananas in the microwave. Pierce with a fork on outside in a few places making sure you reach the banana. Then, microwave whole, in peel for 1 1/2 minutes on high.
