
Golden Salad
Ingredients:
Mix greens
4 Eggs
1kg potatoes
1/4 cup olive oil
Seasonings (sea salt, peppercorns, garlic, herbs)
Salad dressing of choice
Method::
1. Wash & peel potatoes. Cut into chunks.
2. Drizzle olive oil over the potatoes, sprinkle the seasonings & toss to combine
3. Put the potatoes into a baking tray. Bake at 180C for 50 minutes until golden. (Shake the pan occasionally)
5. Poach eggs in a pan of water.
6. Toss together the mix greens, potatoes & salad dressing.
7. Top with a poached egg & it's ready to serve.
Serves 4.
